1、掌握前厅内的设施及活动,监督及管理前厅内的日常工作。

2、安排员工班次,核准考勤表。

3、对前厅服务员进行定期的培训,确保餐厅的政策及标准得以贯彻执行。

4、经常检查餐厅内的清洁卫生,员工个人卫生、服务台卫生,以确保宾客的饮食安全。

5、与宾客保持良好关系,协助营业推广、征询及反映宾客的意见和要求,以便提高服务质量。

6、与厨师长联系有关餐单准备事宜,保证食品控制在最好水平。

7、监督每次盘点及物品用具的保管,保证前厅固定资产及用具的安全完整。

8、主持召开餐前会,传达有关指示,做餐前的最后检查,并在餐后作出总结。

9、直接参与现场指挥工作,协助所属员工服务和提出改善意见。

10、督促及提醒员工遵守餐厅的规章制度。

11、推动下属大力推销产品。

12、抓成本控制,严格堵塞偷吃、浪费、作弊等漏洞。

13、负责餐厅的服务管理,保证每个服务员按照餐厅规定的服务程序、标准去做,为宾客提供高标准服务。

14、经常检查前厅常用货物准备是否充足,确保餐厅正常运转。

15、严格财经纪律,根据有关凭据,认真核对每日营业收入,保证餐厅营业收入安全、完整的收回。

16、每日了解当日供应品种,缺货品种,推出的特选等,并在餐前会上通知到所有服务人员。

17、及时检查前厅设备的状况,做好维护保养、餐厅安全和防火工作。

一、加强员工的业务培训,提高员工的综合素质

前厅部的每一位成员都是酒店的形象窗口,不仅整体形象要能接受考验,业务知识与服务技巧更是体现一个酒店的管理水平,要想将业务知识与服务技巧保持在一个基础之上,必须抓好培训工作,如果培训工作不跟上,很容易导致员工对工作缺乏热情与业务水平松懈,因此,本职计划每月根据员工接受业务的进度和运用的情况进行必要的每周一次培训。同时在每月5日前向总办与人力资源部上交上月的培训总结与本月的培训计划进行监督。

二、加强员工的销售意识和技巧,提高入住率

酒店经过了十九年的风风雨雨,随着时间的逝去酒店的硬件设施也跟着陈旧、老化,面对江门的酒店行业市场,竞争很激烈,也可说是任重道远。因酒店的硬件设施的陈旧、老化,时常出现工程问题影响对客的正常服务,对于高档次的客人会随着装修新型、豪华酒店的出现而流失一部份,作为酒店的成员,深知客房是酒店经济创收的重要部门之一,也是利润最高的一个部门,因此作为酒店的每一位成员都有责任、有义务做好销售工作。要想为了更好的做好销售工作,本职计划对前台接待员进行培训售房方式方法与实战技巧,同时灌输酒店当局领导的指示,强调员工在接待过程中,总台的客人我们都应想办法把客人留下来”的宗旨,尽可能的为酒店争取住客率,提高酒店的经济效益。

三、加强各类报表及报关数据的.管理

近几年,中国旅游业飞速发展,面对各国旅游人士的“进攻”,作为酒店行业的接待部门,为了保证酒店的各项工作能正常进行,本职将严格要求前台接待处做好登记关、上传关,前台按照公安局的规定对每位入住的客人进行入住登记,并将资料输入电脑,客人的资料通过酒店的上传系统及时的向当地安全局进行报告,认真执行公安局下发的通知。同时将委派专人专管宾客资料信息、相关数据报表。

四、响应酒店领导提倡“节能降耗”的口号

节能降耗是很多酒店一直在号召这个口号,本部也将响应酒店领导的号召,严格要求每位员工用好每一张纸、每一支笔,以旧换新,将废旧的纸张收集裁剪成册供一线岗位应急之用。同时对大堂灯光、空调的开关控制、办公室用电、前台部门电脑用电进行合理的调整与规划。

五、保持与员工沟通交流的习惯,以增近彼此的了解便于工作的开展。

计划每个月找部门各岗位的员工进行谈话,主要是围绕着工作与生活为重点,让员工在自己所属的工作部门能找到倾诉对象,根据员工提出合理性的要求,本职将员工心里存在的问题当成自己的问题去用心解决,做力所能及的。如果解决不了的将上报酒店领导。让员工真正感受到自己在部门、在酒店受到尊重与重视。

六、做好部门内部的质检工作

计划每个月对部门员工进行一次质检,主要检查各岗位员工的仪容仪表、礼节礼貌、岗位操作技能与踪合应变能力。质检人由部门的大堂副理、分部领班、经理组成。对在质检出存在问题的给一定时间进行整改,在规定的时间若没有整改完成将进行个人的经济罚款处理。
