作为主宾参加外国举行的宴请,应了解对方祝酒习惯,即为何人祝酒,何时祝酒等等,以便作必要的准备。

碰杯时,主人和主宾先碰,人多可同时举杯示意,不一定碰杯。

祝酒时注意不要交叉碰杯。

在主人和主宾致辞、祝酒时,应暂停进餐,停止交谈,注意倾听,也不要借此机会抽烟。

奏国歌时应肃立。

主人和主宾讲完话与贵宾席人员碰杯后,往往到其他各桌敬洒,遇此情况应起立举杯。

碰杯时,要目视对方致意。

宴会上相互敬酒表示友好,活跃气氛,但切忌喝酒过量。

喝酒过量容易失言,甚至失态,因此必须控制在本人酒量的三分之一以内。

如何处理就餐时遇到的意外情况

宴会进行中,由于不慎,发生异常情况,例如用力过猛,使刀叉撞击盘子,发出声响,或餐具摔落地上,或打翻酒水等等,应沉着不必着急。

餐具碰出声音,可轻轻向邻座(或向主人)说一声“对不起”。

餐具掉落可由招待员送一付。

酒水打翻溅到邻座身上,应表示歉意,协助擦干;如对方是妇女,只要把干净餐巾或手帕递上即可,由她自己擦干。

从餐具说起吧。中国人吃饭离不开筷子,那英国人用餐当然就少不了刀叉和勺子了。英国的餐具的统称为cutlery。一般典型英国的家庭聚餐三道菜包括开胃菜appetiser、主菜 main、还有甜点dessert。如果你去英国的餐厅吃饭,menu上也是跟着这套流程走的。

在开餐时,如果主人给你上菜,记住要感谢对方,即使主人是你很要好相识了多年的朋友,也要记得感谢对方,这些一种英国人的惯性礼仪。同时也要记得用餐时要等主人开动了,客人才能开动,这和国内的礼仪是一样的,客人一般都是等齐客人才动碗筷的。还有当你在咀嚼食物或说话的时候,必须得放下刀叉来表示尊重。一般来说左手拿叉,右手拿刀。在进餐的时候,由外侧往内侧取用刀叉,刀刃不可向外,用餐完毕也要放回原位。每吃完一道菜,将刀叉并拢放在盘中,表示waiter可以将餐具撤走了。

3、喝汤时不要啜,吃东西时要闭嘴咀嚼。不要舔嘴唇或咂嘴发出声音。如汤菜过热,可待稍凉后再吃,不要用嘴吹。喝汤时,用汤勺从里向外舀,汤盘中的汤快喝完时,用左手将汤盘的外侧稍稍翘起,用汤勺舀净即可。吃完汤菜时,将汤匙留在汤盘(碗)中,匙把指向自己。

5、面包一般掰成小块送入口中,不要拿着整块面包去咬。抹黄油和果酱时也要先将面包掰成小块再抹。

6、吃鸡时,欧美人多以鸡胸脯肉为贵。吃鸡腿时应先用力将骨去掉,不要用手拿着吃。吃鱼时不要将鱼翻身,要吃完上层后用刀叉将鱼骨剔掉后再吃下层吃肉时,要切一块吃一块,块不能切得过大,或一次将肉都切成块。

7、喝咖啡时如愿意添加牛奶或糖,添加后要用小勺搅拌均匀,将小勺放在咖啡的垫碟上。喝时应右手拿杯把,左手端垫碟,直接用嘴喝,不要用小勺一勺一勺地舀着喝。吃水果时,不要拿着水果整个去咬,应先用水果刀切成四瓣再用刀去掉皮、核、用叉子叉着吃。

8、用刀叉吃有骨头的肉吃有骨头的肉时,可以用手拿着吃。若想吃得更优雅,还是用刀较好。用叉子将整片肉固定(可将叉子朝上,用叉子背部压住肉),再用刀沿骨头插人,把肉切开。最好是边切边吃。必须用手吃时,会附上洗手水。当洗手水和带骨头的肉一起端上来时,意味着“请用手吃”。用手指拿东西吃后,将手指放在装洗手水的碗里洗净。吃一般的菜时,如果把手指弄脏,也可请侍者端洗手水来,注意洗手时要轻轻地洗。

9、吃面包可蘸调味汁吃到连调味汁都不剩,是对厨师的礼貌。注意不要把面包盘子“舔”得很干净,而要用叉子叉住已撕成小片的面包,再蘸一点调味汁来吃,是雅观的作法。

座次安排

《唐顿庄园》以女士为主,但在传统意义上,主人会以男女相间的原则安排宾客入座。已婚夫妇会被分开,因为通常认为夫妇两人在一起的时间已经够多了。而已订婚的夫妇会被安排坐在一起,这样他们就可以在监护人的陪同下彼此交谈了。轮换原则为了不冷落任何一位客人,您应当和您身旁的男士交谈。之后,女主人会轻咳一声,这时您要转向身侧另一位男士。这就是所谓的“轮换原则”(turning the table)。

宴会上的食物往往是三道食品——一道菜是主菜;二道菜是布丁或奶酪;三道菜是甜食(如水果)。如果自己是一位素食者,应提前向主人申明。目前,西方国家宴会上的器具设施大约分成:银器、瓷器、玻璃器皿、上菜盘、厨房用具五大类:

银器、(或不锈钢器),包括大小刀叉、汤匙、布丁匙和咖啡匙,此外,还应有一个公用餐匙和一把利刀。

瓷器。西方国家正式宴会,,除甜食盘外,所用瓷器须套用。

宴会所用瓷盘有大、中、小三号,如有汤还需有汤碗或汤盆。此外,还有中号奶酪盘。
