元宵节也是家乡的一大乐趣,大家一大清早就会去市场买好材料回家做元宵,在家乡有炸元宵的做法,看上去容易的几道工序,真的做起来就没那样容易了,面需要揉匀,汤圆需要捏紧、揉圆,最后再放入锅里炸,炸出来的汤圆有的里面的馅已经出来了,但还要将最后一道精心制作的汁倒上,一道美味佳肴就诞生了。

秋季,是最易感冒的季节。这里家乡里的蒸梨就派上用处了,家乡的蒸梨可以预防感冒,还能在天气日渐转凉的时给身体送上一股暖流。家乡的蒸梨,材料非常简单,做法也比较容易,但却被人有种百吃不厌的感觉。第一把梨切成一小块一小块的,放入冰糖、红枣等材料就好了,蒸出来的梨美味可口。

冬季的哈尔滨冻得被人直哆嗦,这个时候家人都会筹备羊肉火锅来驱寒取暖。东北的羊肉吃起来鲜嫩可口,放在火锅里那更是美上加美,里面再放点萝卜吃起来的味道更是不同,在吃之前,还会沾上东北的大酱,吃起来又有别样的口味。

我先用筷子夹起一片牛肉,将它放进锅里,让它在锅里游上半分钟,由鲜红色变为褐色,然后再把它夹起来。我迫不及待地尝了一口,好鲜嫩啊!这时妈妈给我一碟香油,说蘸香油可以中和火锅的烫和辣。我试了一下,果然蘸了香油的肉的味道更加滑腻温和。我最爱吃的就是鸭血了。我总结的秘诀就是鸭血一定要放在红汤辣锅里煮才更好吃。鲜鸭血很嫩,我用筷子轻轻夹起一片后让它自由自在地在辣锅里游上两分钟,然后再捞出来。我尝了一口:满口鲜嫩顺滑的滋味。那味道在我的嘴里久久流淌,我都无法用语言来形容它的美味。这样美味的火锅,我花了不到一个小时,就把一大堆食物都消灭了。

火锅真好吃呀!真希望以后每天都能吃到火锅。也希望我将来能学会做火锅,给家人朋友一起分享。

在古老的城市里,食,是人们的基本需求。日复一日地,中国人对食有了更高的需求,那就是“鲜”。怎么让食物煮了过后还保持它的鲜,它的营养,这真是一门学问。用什么方法处理食物才能让食物完全煮熟能保存鲜味,正是中国人追求的烹饪工夫。

华人对食物的研究,远远超越了全世界各族人民,他们追求的是色、香、味俱全的食物。还没下锅前的处理工夫最考验厨师的刀工,刀必锋利,食必新鲜。切下去的每一刀都很讲究。刀功强,食物更嫩更弹。做中华厨师真的需要很多功夫才能踏进厨房。中华饮食注重健康,从而在中医诊所找到食疗这种治疗方法,药材能补气补血,更能调理健康,这也是中华食文化保存下来的原因之一。

外国人重于情趣,中国人则重于饮食。中国人既然能以食为天,则“悠悠万事,唯此为大”,世界上还有比天大的吗?答案是肯定的。所以,中国人甚至认为“普天之下,莫非一吃”,认为不管任何事都能用“吃”来解决。这就是现代中国人对千百万年前的老祖宗流传下来的饮食文化的认识,这也是书中所说的“泛食主义”。

说到这“泛食主义”,它也包含在饮食文化内,只不过是口语上通过文字来表达的。就像是说人就叫“人口”;谋生就叫“糊口”;职业和工作就叫“饭碗”。干什么工作就吃什么饭,就像书中所说的:“修鞋补锅是吃手艺饭;说书卖唱是吃开口饭;当教书匠是吃粉笔灰;出租房屋是吃瓦片儿。”总而言之就是“靠山吃山,靠水吃水”。一切都与“吃”扯得上边。

饮食,说白了也就是吃饭。但通过对这本书的阅读,我终于深刻的了解了中国人的“吃饭”文化。

何为“吃饭”文化,我想这也只能在中国才寻找得出答案。在中国人看来,食物乃生命之源。因此给人食物,请人吃饭,是一种很重的礼仪;而接受他人的食物,则是受了很大的恩惠,必须加以回报。这,便是中国文化中“吃饭”文化的基本准则。但在这一来一往,你一席我一顿的过程中,这“吃饭”文化渐渐的变了味儿。中国人随着时代的发展而日渐丰满的腰包也闲不住了,开始流行起“请客吃饭”,而“吃饭”文化的基本准则也渐渐成为中国人请客吃饭的正当理由。大家也习惯起这新一代的“吃饭”文化。像这逢年过节,红白喜事,老人做寿诞,小孩过生日,谁家不请,哪个不吃?如果升了职位,涨了工资,搬了新居,走出国门,三朋四友七大姑八大姨也都会堂而皇之地要求你请客吃饭。有人来了要“接风”,送人走了要“饯行”,有事要“撮一撮”,没事也要“聚一聚”。用书上的话总结:中国人恐怕是世界上最爱请客吃饭的'民族。

这饮食饮食,说完了“食”,接着得说“饮”了。

既然说到“饮”,那么“茶”,便是不折不扣的中国文化。

中国人爱喝茶,西方人爱喝酒。“西人饮酒而取其汁,国人饮茶乃取其气”,这是书上的原话。西方人喝酒是为了身体,中国人品茶则是为了意境。

自古以来,茶就是文人雅士所热衷的“至清至雅之物”,它也往往用于陪衬一些山水美景,文雅之趣。所以,这喝茶不叫“喝茶”,得叫“品茶”,从这品茶中还能品出人生哲理,事物的启迪,从而自古产生那么多的伟大诗人来“颂”茶。就连这品茶中,还品出了茶术之道。

不单“食”能请,这“茶”也能请。比如这“吃早茶”,则是如今商场上用来谈生意的办法之一。吃早茶不过于排场,但也不过于寒酸,几叠小食,一杯清茶,既能解决早餐问题,也可以享受其中的一点“意境”。它也确实比请客吃饭少了一点铜臭味,少了一点利益和关系。

柴米油盐酱醋茶,厨房中的繁杂琐事,生活中的切切察察;

悠悠上下五千年,时代中的巨大变迁,历史中的中国文化。
