Thus, in early autumn, governor William Bradford arranged a harvest festival to give thanks to God for the progress the colony had made.

新老佛山人耳熟能说的特色小吃―――大可以的油条和及第粥,早在1932年起就开始和佛山人风雨同舟,走过了近百年的历史。至今在佛山已有4家分店。大可以油条俗称“油炸鬼”,入口香酥,既脆又,咬在嘴里十分耐味。它的状元及第粥也叫“状元粥”,近百年来,“状元粥”的用料配方和烹煮技术秘神外传,所以时日虽久,但“状元粥”仍能永褒原味,独瞳天下,无人能仿,更无人能及。“油炸鬼”和“状元粥”在获“中华名小吃”后,又连续荣获广东“十大名小吃”和佛山“十大风味小吃”之誉。
应记云吞面
据说,1936年的某一天,佛山一应姓人家用超凡的手艺做成了应记的第一碗云吞面。从那以后,应记云吞就日夜夜,从不间断地在佛山的大街小巷迷倒了一代又一代佛山人。如今应记在佛山已有14家店面,人们在街头巷尾都能闻到应记云吞的香味。应记云吞有皇牌鲜虾云吞面和普能云吞面两种。前者皮薄肉厚,一粒粒鲜红的虾肉在皮下隐约可见,其味脆口清甜,价格比普通云吞面贵近一半,为6元钱一碗。应记的“皇牌鲜虾云吞面”获得20“中华名小吃”和20佛山“十大风味小吃”之荣誉。
皇后双皮奶
皇后双皮奶始创于上世纪三十年代,民间曾有歌谣流传说:“皇后双皮奶,太子吃不坏”。但时至今日,它却因为含有高蛋白质和高糖分而逐渐“失宠”了。但其贵为“皇后”,如今风韵犹存,还在征服着为数不少的小吃爱好者。据介绍,皇后双皮奶做法考究,先把滚奶倒入碗中,取出其冻后的奶皮(第一层),再把牛奶和蛋清打混煮滚,得到第二层皮,此即为比皮奶。双奶表面有一层微黄薄稣之皮,奶质凝稠细滑,细品其味,香甜奇特。
盲公饼
还没来佛山之前,就知道盲公饼是佛山的名特产了,并且知道它出于一位盲公之手,但它有160多年的历史,是谭先生告诉了才知道的。合记公司的谭先生介绍,盲公饼之所以驰名天下,主要是它的独特。而它的独特不仅是原料上乘,而且配制手法极为精妙。其原料以糯米为主,食糖、花生、芝麻、猪肉等为其主要配料。盲公饼饼心的内,制法最为精巧,用幼细白糖腌藏数月后,才取出配制,吃起来甘美酥脆,回味无穷。树大招风,盲公饼曾经已成为“受侵”的目标。所幸是佛山的合记饼家如今已获得盲公饼生产专利权,名正言顺地捍卫住了盲公饼为佛山名物产的权益。

清真牛干巴
寻甸回族彝族自治县是著名的“清真牛干巴”的产地。要腌制色佳味美的牛干巴,必先喂养壮牛。进入寒露节令时,便开始宰牛、腌制牛干巴,通常一头牛只能制作出12对牛干巴。
宣威火腿
宣威火腿以当地特产的鸟蒙猪为原料,因加工制作后形似琵琶又称之为“琵琶”,宣威火腿肉色鲜艳,红白分明,瘦肉枯桃红色,咸香中带甜味,肥肉香而不腻。形成宣威火腿特殊风味的因素很多,地理气候环境是首要的,腌制工艺技术也起重要的作用。
麻衣撒子
陆良制作“麻衣撒子”已有200年的历史,麻衣澈子是用麦面作原料,和好面后扭成“千钧扣”油炸的糖果。色泽金黄,表层是芝麻糖衣,特点是香、脆、酥、甜,特别是内里灌满了糖饴,甜润柔腻。
曲靖韭菜花
将半籽半花的韭菜花剁细,加入盐巴、白洒,搅拌均匀,放入罐内,用半年的时间使韭菜花肉质糖化,然后拌上干苤蓝丝、辣椒、红糖、白洒腌制,待呈黄红色即可。脆嫩鲜美,甜咸适口,有助于增进食欲。
陆良板鸭
选用壮而肥的仔鸭宰杀后,用适最食盐腌制而成,每只重2公斤左右,杏仁形,挂于室外清洁、干净、阳光充足和干燥通风的`晾鸭架上,风吹日晒,数日后晒干即成板鸭。陆良板鸭色白透明。盐味适中,肉质细嫩,味道鲜美,独具特色。
富源酸菜
取上好的萝卜和小油菜为原料,烧锅开水,加入少量淀粉和肉粉,分别将洗净切成细丝和小段的萝卜、菜缨放进去炸一下,捞起装入缸内,然后盖好盖子置于火炉旁,夜即酸,第几天便可食用。新做的酸菜吧通常还要加入少许“引子”,也就足陈酸菜的酸汤,做好后的富源酸菜,绿白相间,黏稠滑腻,酸纯无比。
鸡枞
一种野生菌,色自,伞状。将新鲜鸡极与火腿同烹,鲜美异常。但因新鲜鸡极不耐保存,故将新鲜鸡枞撕成条状油炸以逼其水分,方得以长期保留。油炸后的鸡枞外观丑陋,但奇香扑鼻。

筒子鱼
筒子鱼是微山湖传统名吃之一。用去头刮鳞鲫鱼,片下鱼片,水氽后,卷成曲筒状烹之,因菜肴的形状得名。筒子鱼无刺无皮,肉质嫩美,百吃不腻。
干贝熘黄菜
干贝熘黄菜属清真菜。先将蛋黄打散,加入湿淀粉、绍酒、凉牛肉(鸡肉)汤搅匀。再将蒸好的干贝捞出控净水分。锅放火上,加入植物油,烧后将蛋黄慢慢下锅,不断搅动,熟时先盛部分于盘内,再放干贝搅拌均匀,淋上鸡油盛在上面即可。此菜色泽金黄,味鲜浓香。
干崩虾仁
干崩虾仁济宁传统风味菜。制作时,先将小虾淘洗干净,控净水分,挤出虾仁,蛋清糊抓匀,再将南荠丁、海参、水发蚕豆放开水一烫。匀放火上加油烧至五成热,下小虾仁,至外焦时出勺控油。内留油少许,用味精、精盐、牛肉(鸡肉)汤对成的汁调味,倒入虾仁、配料颠翻均匀,出锅即成。此菜色泽洁白,脆嫩淡爽,清香鲜美。
油爆鲫鱼卷
油爆鲫鱼卷将鲜活鲫鱼斩头去鳞,剖成两片,剔刺,从里面打上花刀,再把鱼片截成3公分宽、6公分长的块状,挂上蛋清糊,下热油锅,待鱼皮收缩,自然成卷时,立即捞出。泼上由白胡椒面、葱姜蒜末、黄瓜片、黑木耳勾成的汁芡即成。此菜外焦里嫩,干香鲜美。
漂汤鱼丸
漂汤鱼丸是微山湖传统名吃之一。一般的鱼丸子都沉入汤内,而微山岛的鱼丸子在汤中全部漂浮着,故名漂汤鱼丸。一鲜、二嫩、三软、四漂。
八宝圆鱼

搅团为西北地区一特色吃食,定义为“用面搅成的浆糊”,陕甘宁尤好吃。根据主要用料不同,分为荞面搅团、玉米搅团和洋芋搅团,陕北用荞面做搅团,更筋道味美。在西北,有一种说法:谁家娶的媳妇儿贤不贤惠,是要看看她打的搅团光不光或h道不h道。搅团的吃法有很多种,有水围城、漂鱼儿,陕北也有烩搅团、炒搅团和凉拌搅团等多种吃法。
搅团为西北一特色吃食,定义为“用杂面搅成的浆糊”,陕甘宁青尤好吃。在水滚时,一手握一棍子搅动,另一手均匀撒各样杂面,否则杂面会结块,不能和水分充分结合,以至于结块部分久煮不熟,既影响视觉,又影响味觉,也造成不必要的浪费。棍子顺时针搅几下,逆时针搅几下。
搅团是西北地区的农家饭,搅团要360搅,做搅团一手端面粉,一手拿擀面杖,把面粉均匀地倒入开水锅里,同时不停地搅拌,搅至没有干面粉为至,然后注入一定量的开水,用擀面杖划成一团一团的,待烧开冒泡时,用力搅拌,直至均匀无小颗粒。第二次注入开水加热,待熟后,最后一次搅匀,一锅搅团就做成了。醋水好,搅团香,吃搅团做醋水也挺讲究的,醋水要有香油、辣椒、蒜泥、姜沫、芝麻等。搅团,在60-70年代可以说是农家的救命饭。那时,农民的口粮标准低、粗粮多。农家几乎每顿饭不离搅团。原因是搅团含水量大,少量的面粉可以做出大体积的食物,用以充饥;搅团是用高梁面、玉米面做的,与醋水一块吃,掩盖了粗粮的缺陷,口感好,又增强食欲。
搅搅团大都是由家中主妇来搅,搅一阵小歇时,舀一勺向空中一提,H地,在气雾中就会看到一条溜滑溜滑的蛇线穿雾直下,在旁观者的感觉中,那“蛇线”好似一种劳动成果的展示,而实际上呢,那只是妇人在试看搅团的“软硬”。只要软硬稀稠合适,这搅团嘛,才越搅越光越搅越h道。所以,在那时,有一种说法,即:谁家娶的媳妇儿贤不贤惠,是要看看她打的搅团光不光或h道不h道。
历史渊源:
至于搅团这个饭食是怎么来的,无从考证。传说中是诸葛亮当年在西祁屯兵的时候(西祁就是今陕西的岐山县),因为久攻中原不下,又不想撤退;士兵清闲无事,就在那里大力发展农业,以供军粮充足。老吃惯了地方的面食,军中都很厌倦了,也是为了调节军队士兵的想家情绪;于是诸葛亮就发明了这道饭食。不过那时的名字不叫搅团,而是叫水围城。
制作方法
1、锅加水适量,点火烧开,有小米的话可以先将小米下锅煮成小米粥;
2、用面粉均匀地搅拌于滚开水或小米粥的锅中,左手抓玉米面一边向锅中慢慢撒下的同时,右手拿一根棍或勺子在锅里用力搅,要一个方向均匀搅,不要让面打成生面块,无一点疙瘩方可!玉米面撒完后,再同样的方法撒上小麦面,俗话说:搅团要好,搅上百搅,越多搅,做出来的就会越好吃!
3、在搅的过程中,用中火。
4、最后做成的半成品搅拌稀稠可以筷子离锅约15公分,而慢慢向下流动的搅团不断线为宜或是用大铁勺子插进搅团中间不倒为决定条件;也可根据自己的喜爱决定。
5、待搅拌的稀稠均匀,没有疙瘩时,小火烧,时时要去搅或是转锅,切记不可粘锅冒烟!
制作要领
1.用力要狠、猛,当以不弄破锅为宜。
2.搅至浆糊状,继续加热少时即可。
3.不能用白面搅,不过可以在杂面中加入少许,以调味。
食用方法
搅团做法单一,但吃法众多,甚至可以花样翻新。最普通的吃法是趁热盛一团入碗,加入酸汤,夹一筷子油泼辣子,顺汤搅匀,然后从碗边开始,夹起一块,汤里一撩送入口中。那酸汤种类可以很多,地道的要算萝卜缨渍成的那种,萝卜缨本算不得菜,烧、炒、煸都进不了口,可渍成酸菜,特别是配搅团吃,增色,爽口。搅团软和。除了煎汤热吃,还可凉调冷拌:热搅团出锅,摊晾于案板,待冷却定型,用刀切成薄条,像拌凉粉一样,酸辣咸淡。这种凉拌搅团,是饭,也可充菜。最相宜的是玉米疹就搅团,稠稠一碗玉米疹上,堆起一堆调满汪油红辣子的凉拌搅团。
水围城的吃法很简单:先在大粗瓷碗里盛上半碗“水水儿”,然后舀上一坨搅团,再抄些用开水“泼”的辣椒。
漂鱼儿吃法:溜鱼儿时,先取一大盆冰凉水,然后把滚烫的搅团从漏勺过下,让那沸烫的搅团在凉水中拉成小指粗细的线,边漏要边换盆中的水来冷却,成了,用笊篱掂着捞到搪瓷碗里,之后再浇些“水水儿”,还是要再放些水泼辣子(油泼辣子)来着色。最简单的食用方面:舀到碗里,中间压个小坑,把调好的辣椒调料汁倒到小坑里,从边上夹一块,沾中间坑里的调料,或将搅团盛在一只大盘子里,每人一小碗用酱油醋和辣椒油调成的汁子,然后一筷子一筷子地蘸了来吃。
